Hummus is a great summery food. I love it in a wrap with fresh tomatoes and cucumbers and some Greek yogurt, but it's also great as a dip. It's also quick, easy and cheap to make. My recipe is really lemony and garlicky, so using a little less of either ingredient would be fine.

Garlic Hummus
1 can chickpeas
2/3 cup lemon juice
1/2 cup tahini
3 cloves garlic
5 Tbsp extra-virgin olive oil
2 tsp cumin
salt and pepper
paprika to garnish

Drain the chickpeas and place in a food processor. Add lemon juice, tahini and garlic cloves and blend until smooth. Add the olive oil one tablespoon at a time, blending into a creamy consistency. Add the cumin, salt and pepper and blend.

Serve with a splash of olive oil, a sprinkle of paprika, some kalamata olives and warm pita.

  1. did you purposely turn the hummus into a smiley face? haha, cute!
