Grilled tomato-mozzarella skewers

Summer's officially here! Once again, it's too hot to turn on the oven and make those tasty oven-roasted tomatoes. Here's an easy side-dish that would be perfect with grilled steaks or burgers.



Grilled tomato-mozzarella skewers
1 package grape tomatoes
marinaded mozzarella balls
basil-infused olive oil (or EVOO)

Preheat grill to high. On wooden skewers, string a few tomatoes with mozzarella balls in between. Brush with some basil oil, season with a bit of salt, and throw on the grill. Cook until tomatoes are charred and mozzarella are melty. Eat!
